Garlic and Parsley Shrimp Greek Pitas

INGREDIENTS

  • 4 pitas
  • 2 cups hummus
  • 1 cup sliced Kalamata olives
  • 1 cup roma tomatoes, seeded and chopped
  • 1 cup chopped English cucumbers
  • 1 cup feta cheese, crumbled
  • 1 cup yogurt sauce
  • 16 oz Ultra Natural Garlic and Parsley Shrimp

TO MAKE YOGURT SAUCE

  • 1 cup Greek plain yogurt
  • 3 garlic cloves, minced
  • Juice of ½ a lemon
  • Salt and pepper to taste

DIRECTIONS

  1. Assemble pita as follows: ¼ cup hummus, ¼ cup sliced Kalamata olives, ¼ cup chopped tomatoes, ¼ cup chopped cucumbers, ¼ cup feta cheese, 4 oz shrimp.
  2. Drizzle with yogurt sauce.

YOGURT SAUCE

  1. Mix all ingredients together with a spoon.
  2. Refrigerate until ready to serve.
