Thai Lemongrass & Ginger Shrimp and Pasta
INGREDIENTS
- 1 16 oz Box linguini pasta
- 2 tablespoons olive oil
- 2 cups baby portabella mushrooms sliced
- 2 cups pea pods
- 2 cups cherry or grape tomatoes cut in half
- 1 tablespoon red pepper flakes
- 16 oz Ultra Natural Thai Lemongrass & Ginger Shrimp
DIRECTIONS
- Bring a large pot of salted water to a boil and add pasta. Cook according to package directions.
- Add oil to a skillet over medium high heat. Add mushrooms and pea pods and cook for 2 minutes.
- Stir in tomatoes and cook for another 4 minutes.
- Add shrimp until heated through.
- Add red pepper flakes.
- Toss with drained linguini pasta and serve.
Makes 6-8 servings
