Thai Lemongrass & Ginger Shrimp and Pasta

INGREDIENTS

  • 1 16 oz Box linguini pasta
  • 2 tablespoons olive oil
  • 2 cups baby portabella mushrooms sliced
  • 2 cups pea pods
  • 2 cups cherry or grape tomatoes cut in half
  • 1 tablespoon red pepper flakes
  • 16 oz Ultra Natural Thai Lemongrass & Ginger Shrimp

DIRECTIONS

  1. Bring a large pot of salted water to a boil and add pasta. Cook according to package directions.
  2. Add oil to a skillet over medium high heat. Add mushrooms and pea pods and cook for 2 minutes.
  3. Stir in tomatoes and cook for another 4 minutes.
  4. Add shrimp until heated through.
  5. Add red pepper flakes.
  6. Toss with drained linguini pasta and serve.
