Cajun Shrimp Mac-n-Cheese
INGREDIENTS
- 16 oz box uncooked cavatappi pasta
- 1 tablespoon extra virgin olive oil
- 6 tablespoons unsalted butter
- ⅓ cup all-purpose flour
- 3 cups whole milk
- 1 cup heavy whipping cream
- 4 cups sharp cheddar cheese, shredded
- 2 cups Gruyère cheese, shredded
- Salt and pepper to taste
- ¼ teaspoon cayenne pepper
- ¼ teaspoon sweet smoked paprika
- 1 cup parmesan cheese
- 16 oz Ultra Natural Cajun Shrimp
DIRECTIONS
- Preheat the oven to 350°. Lightly grease a large 6 quart baking dish with olive oil and set aside.
- Cook the pasta until al dente, according to package directions. Remove from heat, then drain and place in a large bowl. Set aside.
- Melt butter in a deep saucepan.
- Whisk in flour over medium heat and continue whisking for 1 minute, until bubbly and golden.
- Gradually whisk in milk and heavy whipping cream until nice and smooth. Whisk in salt, pepper, and spices.
- Add ½ of the shredded cheese and whisk until smooth. Then add the additional cheese and continue whisking, until creamy and smooth. Sauce will be nice and thick.
- Add pasta until combined and fully coated.
- Add cajun shrimp.
- Pour mac-n-cheese into a prepared baking dish. Sprinkle with 1 cup of parmesan cheese.
- Bake for 30-40 minutes, until bubbly and golden brown.
