Thai Lemongrass & Ginger Shrimp Rice & Veggie Bowl

INGREDIENTS

  • 4 cups prepared white rice
  • 1 cup small red potatoes
  • 1 cup thinly sliced carrot strips
  • 1 cup French green beans
  • 4 hard boiled eggs
  • 1 cup sliced mini cucumbers
  • 1 cup sliced mushrooms
  • 1 cup thinly sliced radishes
  • 1 cup cherry or grape tomatoes cut in ½
  • 4 tablespoons thinly sliced mini red onions
  • 4 tablespoons thinly sliced scallions
  • Fresh cilantro for garnish
  • 16 oz Ultra Natural Thai Lemongrass & Ginger Shrimp

DIRECTIONS

  1. Prepare white rice according to package directions.
  2. Set a large bowl of ice water next to stove top.
  3. Bring a large pot of salted water to a boil.
    Add: potatoes and cook until fork tender (around 10 minutes), use slotted spoon and transfer into cold water. Cook carrots and green beans in the same manner and place into ice bath.
  4. Add eggs into boiling water and cook for 7 minutes for slightly runny yolks. Transfer to ice bath to stop cooking.
  5. Heat shrimp according to package directions.
  6. Spoon white rice into bowl. Place all of the remaining vegetables, eggs and ingredients around the inside rim of the bowl on top of the rice and then place heated shrimp in the center.
  7. Garnish with cilantro.
